Roasted Carrots
12 carrots
2- 3 tablespoons of olive oil
1 1/4 teaspoons of ground pepper
Preheat the oven to 400 degrees.
Cut 4" long about 1 1/2" thick slices. Toss them with olive oil, salt and pepper, spread out on sheet pan. Roast for 20 minutes, until brown and tender.
Can garnish with minced dill or parsley, season to taste and serve.
